What to Cook When You're REALLY Busy

The secret to cooking when REALLY busy (and who isn't?) is your good 'ol slow cooker. You know you have one! Found one on sale. Received one as a wedding gift 10 years ago. So here's a no-fail, weeknight meal.

Chicken and Wild Rice Soup

1 can (10 3/4 oz.) cream of chicken soup, condensed
2 C. cooked chicken, chopped
1 C. carrots, shredded
1 C. celery, diced
2 pkgs. (4 oz. each) long grain and wild rice mix, with seasoning packets.
5 C. chicken broth
5 C. water

Combine all ingredients ina greased 4 1/2 to 6 quart slow cooker. Cover and cook on low heat 4-6 hours, or until rice is done.

I wish I had a picture of it. Or maybe not; slow cooker food isn't usually too pretty to look at!

My kids have had this two nights in a row without complaint. Hmmm....maybe I should make it again next week!
